The tour begins amongst the olive trees, where we will welcome you and explain our particular way of working the land according to organic and biodynamic farming practices, whilst touring the vineyards.
We will then enter the winery to discover key aspects of the winemaking process. First, we will stop in the vat room to taste three young wines in the earliest stage of production, including one being vinified in a stone amphora. This innovative system is virtually one of a kind in Catalonia, ensuring a singular experience.
The tour then moves on to the ageing room, where we will taste the same wines, but at a stage 7 to 8 months later, in the middle of the barrel-ageing process. Here we will have a chance to compare the purity of two local varieties, Mandó and Sumoll, aged in clay amphorae, with two foreign varieties, Merlot and Cabernet.
Finally, you will be treated to two tasting surprises, which we are convinced you will love. And what better way to cap off the journey through the life of a Collbaix wine than with a tasting of two high-end bottled wines in the tasting room? The tastings will be accompanied by premium-quality local food.
